GF Black Bean Burgers + Corn and Avocado Salad

Happy New Year, everyone! It’s that time of year when so many look to eat cleaner, be healthier, and drop those holiday pounds. I’ve got a perfect, easy, Gluten-free/ Dairy-free (GF/DF) and super tasty recipe for this self-improvement time of year, as well as for the rest of the year: Black Bean Burgers with Corn and Avocado Salad!

When attempting to keep a clean diet, the last thing I want is to realize that I’m dieting due to eating bland and boring food. That’s why I love this recipe so much!

The Corn and Avocado Salad can definitely be used as a salsa and eaten with tortilla chips, but I really enjoy it on these burgers. This salad elevates the flavor and makes the burger interesting. The corn is so sweet and the avocado is perfectly creamy. The onion and lime add the proper “zing” to make the salad interesting.

Corn Avocado Salad

The burgers are surprisingly meaty considering they contain no meat at all. They are backed with flavor from the green chiles and spices. I didn’t find them to be spicy, but if you’re worried about it, feel free to leave out the chiles or perhaps only half of them. To make these burgers GF, I use Ian’s Gluten Free Panko Breadcrumbs (without seasoning) for my GF/DF husband. You need the breadcrumbs so your burgers don’t fall apart.

Finallly, for my husband, I make sure to use a GF hamburger bun that I toast lightly in the pan after the burgers are done cooking.

 

Here’s the recipe!

Corn and Avocado Salad

1 can sweet yellow corn, drained
1 avocado, diced
1/4 cup red onion, chopped
1 lime, juiced
2 tablespoons fresh cilantro, chopped
1/2 teaspoon salt
Pinch of sugar

Mix all ingredients together in a bowl and refrigerate until ready to serve.

Black Bean Burgers

1 can black beans, drained and rinsed
1/4 cup fresh cilantro
1/4 cup red onion
1 egg
2 tablespoons canned green chiles
1 clove garlic
3/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lime juice
1/2 cup + 2 tablespoons Ian’s Gluten Free panko breadcrumbs (plus extra)

Blend all ingredients in a food processor for 1 minute or until texture is consistent, scraping sides of processor half way through. In a plate, sprinkle more panko breadcrumbs. Oil your hands and make patties and set them on the breadcrumbs. Put in refrigerator for an hour (or freezer for a few minutes) so patties can firm up.
Add 2 tablespoons of coconut oil to a heavy skillet and cook patties over medium-high heat, 2 minutes per side (or longer if you want them darker).
