I’m going to make this post short and sweet, much like the time it takes to prepare this meal. Turkey and Sweet Potato Hash is one of those Pinterest delights I stumbled upon, tried, and had to share! The sweetness of the ground turkey, sweet potato, and yellow bell pepper work together in harmony, and yet it’s savory because of the onion, garlic, and mozzarella cheese.
Did I just say “cheese” even though my husband, David, is dairy-free? Why, yes I did, and this one actually melts and tastes like cheese. Daiya Foods is my g0-to cheese for David.
To make this dish, heat a skillet over medium-high heat, and brown the turkey with the garlic, which will take about 10 minutes. Then add onion and yellow bell pepper, cooking until the onion is lightly golden brown.
Next, add the sweet potato, salt and pepper. Cover and cook until the sweet potato is tender. Meanwhile, preheat the oven to 400ºF in preparation to melt the cheese in the next step.
When the sweet potato is cooked through, cover the top of the hash with the Dairy-Free mozzarella cheese and place in the oven to melt the cheese. Finally, sprinkle the top of the hash with a little fresh chopped parsley.
Turkey and Sweet Potato Hash
- 2 tbsp extra-virgin olive oil
- 1 lbs extra-lean ground turkey
- 1 tsp clove garlic, minced
- ½ cup onions, diced
- 1 yellow pepper, diced
- 2 cups sweet potato, diced
- Salt and pepper
- ½ cup Daiya Dairy-Free shredded mozzarella cheese
- Fresh parsley for garnishing
In a cast iron skillet, heat olive oil over medium-high heat.
Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes.
Add onion and yellow bell pepper and cook until onion are golden brown.
Add the sweet potato, salt and pepper.
Cover the skillet and cook until they are tender. Don’t forget to stir occasionally. If necessary, add more olive oil or a little bit of water to cook the sweet potato.
While the sweet potato is cooking preheat the oven to 400ºF.
When the sweet potato is tender, add shredded mozzarella cheese and bring the skillet to the oven to melt the cheese.
When the cheese melts, remove from the oven and garnish with parsley.
